Pesto Chicken Meal Prep Bake

Holy Moly this Chicken Pesto Rice is a winner. It’s been a favourite in our house for years, and I often get requests from extended family and friends to make this…and the best part is - it’s so simple!.
This is a great recipe for meal prep - just bake each portion individually and pop them in the fridge. Flavorful, nutritious, and high in protein, these are great for a weight loss plan, or simply to feed the fam on a busy week night. This is a tasty and wholesome meal without any compromise.
INGREDIENTS:
1 Bunch Asparagus
600g Chicken
15 Tbsp Uncooked Rice
2 1/2 Tsp Minced Garlic
5 Tbsp Pesto
1 1/4 Cup Greek Yoghurt
1 1/2 Cups Low Sodium Chicken Stock
2 Punnets Cherry Tomatoes
1 Cup Mozzarella Cheese
Salt and Pepper to Taste
METHOD:
Preheat oven to 180° celsius
Pre chop chicken and asparagus into bite sized pieces
On a baking tray, place 5 950ml glass oven safe containers, divide up the ingredients equally and add the rice, chicken, garlic, pesto, greek yoghurt, chicken stock and salt and pepper to the containers and stir to combine.
Add in the asparagus, cherry tomatoes and top with cheese.
Bake in the oven for 30-35 minutes or until your rice is cooked through
Tip: If your oven is old, it will likely not heat evenly, so turn the tray a few times during the baking process to make sure the rice cooks evenly.
